Good evening to you! Well, for most of you it is middle of the day… so I have a great, easy dessert idea for you. If you’re having a rough day it can be your afternoon snack! Then you can let the kids run around outside like crazy people and have yourself a nice cup of coffee while you browse your email or chat with a friend you haven’t heard from in a while.
Oh, now that I look at the pic, it sorta looks like an animal cracker massacre on a snowy day. Tastes good, though!
I started with a need for chocolate, but the only chocolate I had was a bag of chips to make some cookies for someone. And, it didn’t seem like a grown-up thing to do to just pour some chocolate chips in a bowl and eat them. And then I thought of the animal crackers.
So I got down a dish, thinking I would lay the animal cookies on it then put one or two chips on each one, let them melt in the microwave and daintily eat them.
Then Travis walked by and asked if I was going to be melting marshmallows. Because we have quite a few left over from Sadie’s birthday party. hmmmmmm……..
I decided the animals deserved a bed of pillowy goodness.
And then that moment of brilliance happened. I spied with my little eye a pomegranate sitting there, next to the bag of chocolate chips. And this is a really great pomegranate- juicy, sweet-tart, with big seed-pods.
I did not eat it daintily. I don’t think that is possible. Also, my tummy might be a tad bit sick. Next time I would put a little less marshmallow and a little less chocolate chips and more pomegranate seeds.
I think it would also work to do it in a coffee mug. You could cut a slit in the marshmallow (these are those super jumbo kind) stick a cookie or two, or a graham cracker in there along with the chocolate and pomegranate. Then microwave until the marshmallow is all puffy and fluffy.
Then sit back and feel like the most fun mom/wife/daughter/grandma in the whole wide world. Because you are!
